Comforting Kale Mac 'n Cheese time flies.

When this lockdown started, it was my goal to send daily and weekly recipes. Wellllll, it has now been three weeks since I have emailed out a recipe blog and I am just assuming we are all in the same boat. The boat of waking up every morning and just figuring out our day as it comes.

I am a person who loves to use a planner. Someone who typically keeps organized with my business to ensure that I am covering all corners. But, this lockdown has me in a state of rest. And, I hope it does for you as well.

I now know that I was not meant to send daily recipes because I have needed this time to think, feel, breath, meditate, move, eat, rest, and to just BE. So, my promise to you is this: I am going to do my best.

I have had a lot of time to think about what is next. Where will True Desserts land? There was once a mission for opening a brick & mortar, and now..... it is all too uncertain. But, I find such GREAT opportunity in all of this.

You see, I tend to spend every waking second learning and/or thinking how I can do better for you. I find great joy in sharing my experiences and education with you as a catalyst for positive outcome.

This means that I am super happy I was forced to cancel the six day wellness retreat I had planned because now I have the time to create something even greater for you, including the study of Mycology!

My mission on this planet is to teach myself the deepest methods of healing the self physically, emotionally, mentally, and spiritually so that I can then share it with you.

So, stay tuned because I have a lot of happy coming your way...including a new recipe boo! And, for the time being, enjoy this comforting recipe.


Ingredients: (organic if possible)

1 package brown rice pasta

1 package frozen kale or 1 fresh bunched, chopped


3 cups raw cashews, soaked

2 large garlic cloves

1/3 cup nutritional yeast

Juice of 1 lemon or 2 TBS cold-pressed lemon juice

1 tsp Cumin

1 tsp Curry

1.5 Cup filtered water

Mineral Salt, to taste

Ground black pepper, to taste


1. Boil the pasta according to directions on package. Drain and rinse.

2. Steam the kale until tender but not overcooked.

3. Add the water to a high speed blender before any of the other sauce ingredients. This creates the creamiest consistency. Add the rest of the ingredients and blend. Add more water if needed.

4. Place the pasta and kale in a large bowl. Pour the sauce on top and mix thoroughly.

5. Grab your favorite bowl and hot sauce and enjoy!
